Triple Chocolate Cake
1 package Devil's Food Cake Mix
1 package (5.9 oz) Instant Chocolate Pudding Mix
1 1/4 cups water
1/2 cup oil
4 large eggs
1 package semi-sweet chocolate chips, divided
Glaze:
1/2 cup heavy cream
1 cup semi-sweet chocolate chips
Combine first 5 ingredients in a large bowl. Mix until well blended. Set aside 1 cup of the chocolate chips, and stir remaining chocolate chips into the batter. Using a pastry brush or a piece of plastic wrap, coat the inside of a bundt pan with Pan-Eze (SEE RECIPE, BELOW). Pour batter into pan and bake at 350 degrees for 55 minutes. Cake tester will not come out clean. Cool in pan for 10 minutes. Invert onto a rack or serving dish and cool completely.
Glaze: Combine remaining cup of chocolate chips and heavy cream in a small saucepan over low heat stirring constantly just until chips are melted. Remove from heat and cool for 15 minutes. Drizzle glaze over cake. Let glaze set before serving. Serve with whipped cream or vanilla ice cream, if desired.
Pan-Eze: Combine equal parts of vegetable oil, shortening and flour (I used approximately one teaspoon of each for the bundt pan). Stir until well blended. Use to coat the inside of baking pan.
